500g sweet potato

1-2 teaspoons garam masala, to taste (can swap for cumin)

¼ cup pepitas

¼ cup sunflower seeds

¼ cup mix of unhulled and black sesame seeds (or regular sesame seeds if not available)

400g tin chickpeas, drained and rinsed

Extra ½ cup sesame seeds for coating

Heat oven to 200C/180C fan/gas 6. Prick the potatoes all over with a fork, then put on a baking sheet and bake in the oven for 1 hr.
